French Toast Custard

  • 3 large eggs
  • ½ cup milk
  • 1 tablespoon vanilla extract
  • Pinch of salt
  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground cinnamon

  • 50 grams mascarpone (room temperature) or as desired
  • 120 grams whipping cream (as desired to taste)
  • Vanilla extract, to taste

How to Make Crème Brûlée French Toast

In a bowl, whisk together the eggs, milk, vanilla extract, salt, and cinnamon until smooth.

Add your bread slices and turn to coat both sides. Let the bread sit in the custard for about 5 minutes, then flip and let the other side soak another 5 minutes (or slightly less if your bread is soft).

In a small bowl, combine the granulated sugar and cinnamon. Set aside.

To make the mascarpone cream, use an electric mixer to whip the mascarpone and whipping cream together until soft peaks form. Add a little vanilla extract as desired. Set aside.

When ready to cook, melt butter in a large skillet over medium heat.

Cook the soaked bread slices until lightly golden, about 2 to 3 minutes. Flip and cook another 3 to 5 minutes until deeply golden.

Now for the brûlée effect:
Sprinkle cinnamon sugar generously on top of each piece of toast. Flip the toast again so the cinnamon sugar side is facing down in the pan. Cook for another 2 minutes, until the sugar melts, caramelizes, and turns golden brown.
